Homer called it "liquid gold", Hippocrates, the Ancient Greek physician called it "the great healer" as olive oil benefits were observed in his medical practice, 400 years BC .... it has represented purity, peace, friendship, glory, wisdom, power and happiness from the beginning of civilization. The olive tree has been cultivated for its fruit for over 6,000 years, originating from the shores of Asia Minor, wild fossilized olive leaves have been found and carbon dated back to 60,000 years ago. The bible depicts the olive as a symbol of hope, represented by the dove returning to Noah with sprigs of the sacred tree to show the receding of the floods.

Roman, Arabic and Phoenician traders transported the olive tree across the Mediterranean Sea and to the countries on its shores, in 1492, the olive tree was exported across the Atlantic to the West Indies by Christopher Columbus and the New World by Portuguese and Spanish traders, finally reaching the shores of California with Franciscan monks in the 18th Century.

This precious golden green oil throughout the centuries has been one of the staple Mediterranean diet foods, used for cooking, fuel, medicinal and pharmaceutical applications, making homemade soap and cosmetics, it has been used to illuminate homes radiating its soft light with the use of traditional olive oil lamps, some of which can still be found in some rural homes. Many families still come together for the olive harvest to gather in the fruits, every year, as they have for generations past.

In Greek Mythology, the Greek deities, Athena and Poseidon were asked by the King of Attica, Cecrops to choose a useful gift for the people of his new and un-named city, to determine who would be patron of the city. Poseidon, the god of the sea, hit against the rock of the Acropolis with his trident, where the trident struck, water poured forth but this water was of no use as it was full of salt. He was offering sea power. Athena the greek goddess of wisdom, justice, skill, war and the arts, struck against the rock, as she did an Olea Europaea tree grew out of the rock. The tree was deemed the greater gift as it provided oil, food and wood and hence the city carried her name forthwith.

Culpepper, the English physician of the 1650's regarded the tree as "a tree of the sun", the oil was used for skin disorders, anti-inflammatory uses, and as a laxative and a digestive aid.
